"Neighbor, how long has it been since you had a big,
thick, steamin' bowl of............... Joyce Tremethick's Chili?" "Well that's
too long." Now that there's a chill in the air, you're going to love these
stick-to-your-ribs chili recipes. Once you read the ingredients you'll know that these are
not low-fat recipes, so eat modest portions, and enjoy!

Joyce's Red Chili |
Sauté:
4 lbs. ground round
1 lb. regular pork sausage
2 medium white onions; chopped
1 bell pepper; chopped
1 teaspoon red pepper flakes
3 cloves garlic; crushed
Drain and add all of the above
to slow-cooker |
Add:
3 cans plain chopped tomatoes
2 14 oz. cans tomato sauce
6 tablespoons chili powder
1 can Rotel tomatoes with green chilis
1 can black beans
1 can red kidney beans
1 can pinto beans
a generous amount of cumin
garlic powder to suit palate
½ tablespoon salt |

Cover and cook on low setting for at least 6 hours. Serve with grated low-fat cheese,
cornbread or crackers.

Joyce's White Chili |
Ingredients:
4-6 chicken breasts; deboned
2 tablespoons olive oil
2 medium white onions; chopped
3 cloves garlic, plus ½ tablespoon minced garlic (or 3 tablespoons minced garlic)
Salt to taste
4 cups defatted chicken broth; 2 cups low sodium, 2 cups regular sodium
3 14 oz. cans northern or white kidney beans
½ cup green chilis; chopped
2 teaspoons ground cumin
1 ½ teaspoons dried oregano
1 teaspoon ground corriander
¼ teaspoon ground cloves
¼ teaspoon cayenne
1 8 oz. can tomato sauce
1 can Rotel diced tomatoes with green chilis
Optional: 1 bay leaf |

Cook:
Sauté chicken breasts in olive oil with onion, garlic, and salt. Cook over low heat until
tender. Purée 1 can beans. Add balance of ingredients to large slow-cooker and cook 8
hours.
